AAA Team’s Favorite Rice Dishes Series: Philippines

AAA team member: Stef (she/her), Philippine Coordinator

Country: Philippines

Name: Silog meals

Description: “Silog” is a portmanteau word combining “sinangag” and “itlog”, which mean fried rice and egg, respectively. In other words, silog meals are usually composed of fried rice, eggs, and one of many choices for cured or processed meat. While usually consumed for breakfast, many restaurants and eateries also offer silog meals the whole day.

I have always thought of silog meals as Filipino comfort food! In my photos below, you’ll see vegan tapsilog (which traditionally uses tapa, a type of cured beef) and vegan longsilog (which traditionally uses longganisa, a local pork sausage). Filipinos can be so creative when it comes to veganizing food!

It’s important to support small vegan food businesses to push our animal justice movement forward, so as to protect them from bankruptcy, downsizing, and closure. This is why AAA’s Philippine fellowship program is working on strengthening the skills of vegan food entrepreneurs! Called “Kain at Hain” (which means Eat and Serve), the fellowship program also has been establishing an allyship with crop farmers and local eateries in normalizing and improving access of Filipinos to plant-based food.
